Historically, cicerchia beans were a staple food among peasants due to their hardiness and ability to grow with little water. Panecotto’s® cicerchia beans, grown in Basilicata, are boiled and preserved in their own cooking water with onion, carrot, celery and salt.

Serving suggestion: This bean soup is Panecotto’s® signature product. Delicious without the need for further cooking and simply drizzled with extra virgin olive oil, it is also a perfect accompaniment to fresh pasta. The beans can also be pureed and served on crostini with a sprinkling of truffle.
Suggested recipe: Over a low heat, fry some chopped onion in olive oil, add the beans and cook for five minutes. Cook fresh pasta separately and combine.
