Serving suggestion: These chickpeas can be enjoyed with just a drizzle of extra virgin olive oil or served with pasta. According to the traditional recipe, they can be eaten with fresh made pasta such as lagane, a type of tagliatelle about 2 cm wide.
Suggested Recipe: Over a low heat, fry the chickpeas with extra virgin olive oil, garlic and tomato. Separately cook some pasta in hot boiling water, drain it, making sure to keep some of the cooking water then add it to the chickpeas. The cooking water will help combine the chickpeas with the pasta. Chilli oil or crushed red pepper can be added to complete the dish.
