Grapes: 100% aglianico
Harvest: handmade, beginning of November.
Vinification: soft stripping with hand made selection. Alcoholic and spontaneous fermentation without yeasts, and 18 days maceration within steel and thermo-regulated tanks.
Ageing:
Alcohol content: within 225 l barriques for 18 months, included malo-lactic fermentation with temperature’s control in cellar. 12 months of refinement in bottle.
Organoleptic features:
- Colour: full ruby red, compact and bright.
- Smell: red fruit smell and ripe black fruit with balsamic notes.
- Taste: rich, enveloping and persistent.
Food pairing: roasts and meat.
Serving temperature: 16 – 18°C.
