Grapes: Moscato (70%) e Malvasia (30%), traditionally grown in the Vulture area. Grapes withered on the plants and then on trellis.
Harvest: handmade, in small boxes, during the last week of September.
Vinification: within new barriques.
Ageing: at least 12 months within barriques and at least 12 months within bottle.
Alcohol content: 14%
Organoleptic features:
- Colour: golden yellow with amber glares.
- Smell: marked out by a wide bouquet of sweet smells, white blasted flowers, dried and candied fruit, but also acacia honey and rose petals.
- Taste: sweet notes, candied orange, apricot jam tastes, honey and dried figs find an opposite taste in a pleasant bitterness which polish the palate and sustains persistence.
- Food pairing: excellent with dried fruit, cakes with honey and cream and seasoned cheeses. Usually dressed with almond cakes, cannoli, pastiera and cassata.
