Harvest: end of October
Vinification: classic, maceration on peels within steel for 15 days at 25/28 °c. In this period many wine tastings are carried out.
Ageing: 50% in big oak barrels and 50% in French barriques. Final bottling and refinement for 12 months.
Alcohol content: 14%
Organoleptic features:
- Colour: deep ruby red, almost impenetrable.
- Smell: wide and complex bouquet.
- Taste: hot and dry that underline great structure and elegance.
Food pairing: red meat, particularly lamb meat.
Serving temperature: 18 °c
