Grapes: 100% aglianico
Harvest: handmade, in boxes, at the beginning of November, when the fruit is completely ripe.
Vinification: 20 days maceration, because in this way it is possible to pull out more wine thanks to the ripe of tannins.
Ageing: at least 12 months in tuff, natural caves, within French oak tonneaux, and then at least other 12 months within bottles.
Alcohol content: 14%
Organoleptic features:
- Colour: ruby red with purple and intense glares. Bright and impenetrable.
- Smell: complex and marked out by smells of small blackberry fruits, licorice plant, fenugreek and carobs with spiced smells.
- Taste: strong and well-balanced, marked out by velvet tannins and an ending balsamic taste.
Food pairing: excellent with game, red meat and seasoned cheese.
