Grapes: 75% Müller Thurgau – 25% Traminer aromatic.
Harvest: beginning of September.
Vinification: 24 hours cold maceration on peels; so the must cold soaked in. Then there is the fermentation between 12 and 14°C.
Ageing: after fermentation wines stay to refine on the fine dregs for 2 months.
Alcohol content: 13,20%
Organoleptic features:
- Colour: straw green with golden glares.
- Smell: very complex smell with notes of apple and peach.
- Taste: spiced notes of sage and nettle together with scents of rose and cinnamon.
Food pairing: fish dishes, in particular crustacean and tuna. Paté, foie gras and soft fermented cheeses. To drink also in dressing with Sushi and Sashimi.
Serving temperature: 8°C.
