Grapes: 100% aglianico
Harvest: handmade, in boxes, in the middle of October, when the fruit is completely ripe.
Vinification: 10 days maceration and vinification at controlled temperature within inox steel. This is a kind of working process used for more traditional wines.
Ageing: at least 12 months in tuff, natural caves, within French oak tonneaux.
Alcohol content: 14%
Organoleptic features:
- Colour: ruby red with garnet glares, bright and impenetrable.
- Smell: elegant, it remembers marasca cherry and ripe plum, with notes of spices and licorice root.
- Taste: rich, full, well-balanced, with clear notes of ripe cherry. With an ending spiced marasca taste and a pleasant tannicity, typical of this kind of grapes and this kind of traditional working process.
Food pairing: excellent with red meat and game dishes.
Serving temperature: room-temperature, 18°C.
