Grapes: 100% aglianico
Harvest: handmade, in boxes, at the end of November or the beginning of December.
Vinification: 30 days maceration, because in this way it is possible to pull out more wine thanks to full ripe of tannins.
Ageing: at least 12 months in tuff, natural caves, within French oak tonneaux, and then at least other 12 months within bottles.
Alcohol content: 14,50%
Organoleptic features:
- Colour: garnet-red, bright.
- Smell: marked out by intensity of mixed berries notes, chocolate and black pepper.
- Taste: well-provided for and elegant, at the beginning it is mellow thanks to residual sugar. Velvety with a spiced ending taste of licorice and fondant chocolate.
Food pairing: well-structured dishes, meat and cheeses with aromatic note. Good pairing also with unsweetened cacao cakes.
Serving temperature: 18°C.
