Grapes: 100% aglianico
Harvest: handmade, end of October.
Vinification: pressing with stripping. Traditional fermentation in red with temperature not higher than 28-30°C.
Ageing: at least 12 months in new barriques.
Alcohol content: 14%
Organoleptic features:
- Colour: intense ruby red with strong garnet glares.
- Smell: wide and complex, certainly fruity and ethereal, with clear spiced notes.
- Taste: arid, hot, wide structure and long aromatic persistence. High personality wine, but very young and so with a great future.
Food pairing: several kind of meat, cornmeal mush and truffles.
Serving temperature: 18-20°C.
